Heavenly Hash

I miss my grandmother.  I mean I really miss my grandmother! I haven’t seen her in a while.  She isn’t well and there are so many times my thoughts turn to her lately, most often when I’m in the kitchen. I used to call her when I was cooking just to tell her what I was cooking, or to hear what she had been up to in the kitchen.  She taught me how to bake and now she rarely bakes anything.

When I think about her I can’t help but think of her Heavenly Hash Cake. The thought of this cake always takes me back to her laugh, her house, and her kitchen.  She and I spent countless hours in her kitchen baking over the years, but Thanksgiving was our extra special time to bake.  She would cook dinner for our family, her mother, her sisters and brother, and all their children and grandchildren. She and I would bake from sun up to sun down. We would each have our stand mixers and bake away.

Cooking with those you love is such a wonderful way to make and keep memories. This was a cake we HAD to make every year for Thanksgiving. I know it’s not holiday time, but Heavenly Hash is on my mind because like I said earlier, I’m missing my MawMaw.

Cake Ingredients:

  • 3 c miniature marshmallows
  • 1 c butter, room temperature
  • 4 eggs, slightly beaten
  • 1 1/2 c flour
  • 1 1/2 tsp baking powder
  • 1/4 c cocoa
  • 2 c chopped pecans
  • 2 tsp vanilla

Icing Ingredients:

  • 1 lb sifted powdered sugar
  • 1/4 c cocoa powder
  • 1/2 c cream or evaporated milk
  • 1/4 c butter, melted

Preheat oven to 350 degrees.  Sift dry ingredients in a medium-sized bowl and set aside.  Cream butter and sugar.  Add eggs and mix.  Stir in sifted dry ingredients and mix well.  Add pecans and vanilla and combine well.  Bake in greased 13 x 9 x 2 inch pan for 40 minutes.  Immediately upon removing the cake, cover the cake with the marshmallows.  Set aside for 5 minutes.  Pour icing over marshmallows and let cool completely before cutting into squares. Icing Instructions: Combine the powdered sugar, cocoa powder, cream, and butter.  Beat until smooth.  Pour over cake.
